Soaking the cut wedges in freezing cold water for just 10 minutes pulls the excess starch right out of the potato (you will literally see the water turn cloudy). Step-by-Step Instructions
1. Cut the Wedges
Grab a sharp knife and cut your scrubbed potatoes lengthwise down the middle. Quarter each half, and then cut those down again so you get beautiful, even eighths.
2. The 10-Minute Ice Bath
Drop your potato wedges into a large bowl of ice water. Let them sit for exactly 10 minutes.
3. Dry Them Completely!
Once soaked, remove the wedges (use tongs so your hands don’t freeze!). The second enemy of crispiness is water, so you need to dry these thoroughly. Use a lint-free tea towel or paper towels to pat them bone-dry. Make sure you dry out your mixing bowl too!
4. Oil and Season
Toss your dry wedges back into the dry bowl. Drizzle with 1 tablespoon of olive oil (or use an oil mister for an ultra-even coat). Sprinkle in your salt, garlic powder, black pepper, and smoked paprika gradually, tossing as you go to ensure every wedge is perfectly coated.
